Summer Soba Salad

So I am running out of ideas for foods for the hot hot afternoons here in Asheville North Carolina.   It doesn't come natrual to me to just eat raw salad every day. 
I need a whole meal, Grain, Green, Bean combination! 
Have any ideas? I would love to know what you are eating this Summer!  

For Lunch 
Soba Salad 
with 
Arugula ,Soba, Carrots, Clover Sprouts, Toasted Sesame Seeds, Cucumber, pan fried Tofu

  1. Hi Claire! I know what you mean about not wanting to eat raw salad every day in summer! I find Mediterranean foods to be a great warm weather option while still getting grains and beans: taboule especially, and hummus (or just chickpea salad), cous cous, etc. And don't know if you've already tried this, but the whole "meal in a jar" thing is kind of fun - layering grains, beans, greens and then a dressing in a mason jar. Very hipster-ish, LOL.
