Mary made a feast for ionia today!!
Stuffing with seitan and mushrooms and croutons and onions.
And cranberry jam to
Go with.
Mashed squash and potatoes.
Salad.
And Brussels sprouts.
I didn't help cook, so I don't know exactly what went into it all, I am sorry.
For dessert thee was a strawberry and blue berry kantan.
With tofu cream on top.

Phiya and I decided to make apple cinnamon muffins.
We started with one of chef satos
Recipes.
The recipe is apple walnut muffins, but we switched it up to fit what we had ;)
And we doubled the recipe, we wanted alot!
So this is what we did.
We started with all the ingredient.
Put the wet ingredients together,
3 cups of maple syrup.
2 cups of apple juice.
3 cups of corn oil.
3 cups of oatmilk.
We put the dry ingredients in another bowl.
3 cups of white flour.
3 good pinches of salt.
4 table spoons of cinnamon.
3 table spoons of baking powder.
And 6 cups of diced apples.
We mixed the two bowls together until smooth.
We put them in the muffin tins, and we filled then up to the top.
Baked them for a half of an hour and the. They were done!!
I love baking!!!! ( Phiya looks like he likes it too ;)

We made a awesome simple
Squash soup:
All you need to do is cut squash and onion into large chunks.
Put it in a pot with water that covers the vegetables.
Boil until soft.
Stir in a pinch of salt.
Blend.
Bring up to simmer. Add salt to taste.!
We also made sweet brown rice with adzuki beans with sautéed onions.
Kinpera style carrot salad with mustard dressing.
Blanched bok choy and mustard greens.

Yesterday Roger and catherine and Made lunch.
We made buckwheat with squash and ginger.
Coleslaw with cabbage, celery, and red onion. With a grape seed oil, salt, lemon dressing.
Blanched kale.
Fried dulse.
I love making French onions soups. Yesterday i made it with chunks of deep fries tempeh.
Phiya made a delicious dessert with the left over dumplings. He re cooked them.
And made a Adzuki bean raisin pudding with maple syrup!

Miso
Ginger
They boiled the squash until soft. The mushed with a spoon so creamy but still some why whole. Then she added the carrots then the celery root then the carrots.
Then she added the water sautéed onions.
Then she added the soft presser cooked chickpeas.
Let it simmer for five min. Then added grated Ginger and miso!! That's it. No oil. And so good!!
With that Gwendolyn and aaron and Mirra made brown rice and sautéed cabbage.
